Steps for preparing folded omelet with spinach and cheese
To prepare our omelet, start by chopping the garlic (or leave the clove whole if you prefer) and sauté it with a drizzle of oil. Add the frozen spinach, or fresh and well-washed spinach, salt, and let them cook until tender.
Crack the eggs and work them in a bowl. Beat them quickly with a pinch of salt.
Pour a drizzle of oil into a pan. Add the eggs and cook for a couple of minutes on low heat. Add spinach and sliced cheese, and fold the omelet in half to form a half-moon. Cover with a lid and cook for another couple of minutes. Serve hot.
