- 6 eggs
- 2 cloves garlic
- 2 zucchini
- 3 tbsps extra virgin olive oil

Steps for the preparation of the folded omelette with zucchini and cheese
Prepare the zucchini. Wash them and cut into chunks. Put two garlic cloves in a frying pan with a drizzle of oil. Add the zucchini, salt, and pepper, and cook for a few minutes; they should still be a bit crunchy. Remove the garlic.
Break the eggs. Quickly mix them with salt and pepper. Pour some oil into a frying pan. Add the eggs, cover with a lid, and cook for a few minutes.
Place the cheese slices on one half of the omelette, then fold it. Cover again with a lid, and cook over low heat until the cheese melts. Serve immediately.
Storage
You can store the omelette in the fridge for a couple of days.
