Preparation of fregula with shrimp and zucchini
Boil the fregula in abundant salted water and drain it al dente. Meanwhile, wash the zucchini and cut them into pieces. In a pan, put a clove of garlic with a drizzle of oil. Add the zucchini and sauté them for 5-10 minutes after seasoning them with salt.
Clean the shrimp (or prawns) if using fresh ones by removing the shell. Add them to the zucchini, cooking for another 5-7 minutes.
Add the fregula to the pan and flavor for a couple of minutes. Season with parsley and organic lemon zest. Mix well and serve.

You can store the seasoned fregula in the fridge for a couple of days.
