Ingredients for the caramel

  • 3/4 cup brown sugar
  • 4 tbsp butter
  • 1/2 cup fresh liquid cream
  • 1 pinch salt
  • 1 1/4 cup milk
  • 3/4 cup fresh liquid cream
  • 1/3 cup all-purpose flour
  • 1/2 cup sugar
  • 3/4 cup gianduia chocolate
  • 3/4 cup fresh liquid cream

Preparation

  • Prepare the salted caramel by placing the butter and sugar in a saucepan. As soon as the sugar begins to caramelize, add the cream and, stirring constantly, cook for a few minutes. Add the salt and let it cool.

  • Prepare the gianduia cream. Heat 3/4 cup of milk and the cream. Separately, work the flour, sugar, and remaining milk. Pour the obtained batter into the warm milk and cream, add the gianduia chocolate in cubes, and, stirring constantly, cook until you have a smooth and velvety cream.

  • Whip the cream; I don’t add sugar. Pour the gianduia cream into 4 cups (whether hot or cold), garnish with fresh whipped cream, and finish with the salted caramel sauce.
