- Electric Beaters
- Cake Pan 9.5 inch diameter
- Hand Whisk
Steps for the preparation of the golden bread cake.
Break the eggs and separate the yolks from the whites. Beat the egg whites until very stiff, adding 2-3 tablespoons of sugar.
Work the semi-melted butter with the remaining sugar. While still working with the electric beaters, add the yolks two at a time. When you have a cream, incorporate the sifted flour and potato starch, the baking powder, and the milk.
Add the grated zest of a bio lemon, the filtered juice, and the salt. Mix everything with a hand whisk and finish by incorporating the beaten egg whites. Pour into the buttered cake pan. Bake in a static oven at 350°F for about 45 minutes (do the toothpick test anyway). Let it cool, remove from the cake pan, and serve, dusting with powdered sugar.
Storage
The cake keeps well for a few days under a glass dome.
