Ingredients for the Preparation of Green Bean Meatloaf
- 18 oz green beans
- 1.3 lbs potatoes
- 5.3 oz fresh cow's milk ricotta
- 2 tbsp breadcrumbs
- 2 tbsp grated Parmesan cheese
- 1 egg

Steps for the Preparation of Green Bean Meatloaf
Trim the green beans and after washing them, steam them. Peel and wash the potatoes. Steam them. Blend the green beans until you get a cream. Mash the potatoes with a fork after salting them.
In a bowl, mix the potatoes with the green bean cream. Add the fresh ricotta, parsley, breadcrumbs, Parmesan, the egg, and chives. If the mixture is too soft, add more breadcrumbs.
Place some breadcrumbs on a sheet of parchment paper. Pour the mixture and use the parchment paper to shape the meatloaf. Drizzle with extra virgin olive oil, roll with the parchment paper, and bake in a fan oven at 356°F for about 30 minutes. Let it rest for about ten minutes, remove the parchment paper and serve.
