Invisible Apple Muffins

One of the apple cakes I love the most is the invisible apple and walnut cake. So I tried to make the invisible apple muffins. Why invisible? Because the apples are sliced so thin that when you eat these muffins, they melt in your mouth. Even the cake itself is more of a batter, without fats, that just serves to bind the apples. Of course, the whole thing is scented with cinnamon, which always goes great with apples. These muffins are quick to prepare and perfect at any time of the day.

Ingredients for Preparing Invisible Apple Muffins

  • 2 apples
  • 2 eggs
  • 1/4 cup sugar
  • 1/3 cup all-purpose flour
  • 1 pinch salt
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 lemon
  • 1 1/2 tbsp butter
  • to taste brown sugar

Steps for Preparing Invisible Apple Muffins

  • Wash the apples, peel them, and slice them thinly with a mandoline. Chop the slices into small pieces. Drizzle them with the filtered lemon juice to prevent browning.

  • In a bowl, crack the eggs. Beat them with the sugar using a whisk. Add the sifted flour, cinnamon, salt, and baking powder. Incorporate the apple slices and mix well.

  • Incorporate the muffin molds and sprinkle them with brown sugar. Pour the apple mixture into the 6 molds. Sprinkle with sugar and bake at 340°F, fan-forced, for about 30 minutes. Allow to cool completely before removing from the molds.

Storage

The muffins keep for a couple of days under a glass dome.
