These jam cookies were made by my daughter Anna, who prepared them for us one evening when we got back very late from Rome. Despite being tired and not very hungry, we couldn’t resist. I had to ask Anna to make them again, and indeed the hands you’ll see in the video are my daughter’s, not mine. These cookies are very easy and quick, besides the rest time for the dough in the fridge of course, to prepare, just like the 3-ingredient almond cookies. They were topped with strawberry jam, but of course, you can use the jam you prefer or spreadable creams.

Ingredients for the Preparation of Jam Cookies

  • 3 1/3 cups all-purpose flour
  • 3/4 cup sugar
  • 1 cup butter
  • 2 eggs
  • Half packet baking powder
  • 1 pinch salt
  • grated organic lemon zest
  • as needed jam

Steps for Preparing the Jam Cookies

  • In a bowl, pour the sifted flour and add the cold butter in pieces. Work quickly with your hands. Add the eggs, sugar, sifted baking powder, lemon zest, or vanilla extract. Work first in the bowl and then on the work surface until you get a smooth dough. Wrap with plastic wrap and place in the fridge for at least one hour.

  • Take the dough out of the fridge and work it a little more with a pinch of flour. Form 18 balls and place them on a baking sheet lined with parchment paper. Slightly flatten them with the palm of your hands. Create heart-shaped indentations (we used the handle of a knife). Bake at 350°F, static, for 10 minutes.

  • Remove the cookies, fill the hearts with jam, and finish baking (about another 10 minutes). For a shinier jam, add a little after baking.

Storage

The cookies keep for a few days under a glass dome.
