Steps for preparing the ladyfingers recipe
In one bowl, place the egg whites and in another the yolks. I used bottled yolks and whites, so it was easier to measure them without wasting any.
Start working the egg whites with electric whisks. When they begin to become foamy, gradually add half of the powdered sugar. Whip them to stiff peaks. You’ll know they’re well-whipped because lifting the whisks will form pointed peaks or they won’t fall when you turn the bowl over.
Then beat the yolks. It will take 4-5 minutes. They should become like a thick foam. Enhance with vanilla extract and salt. Gradually fold the egg whites into the yolks. Mix gently from bottom to top to avoid deflating them.
Fold in the sifted cornstarch and flour. Always mix gently from bottom to top with a spatula. Once you have a homogeneous mixture, put it into a piping bag without a nozzle.
Form the ladyfingers on a baking sheet lined with parchment paper, spacing them well because they will grow a lot during baking. Dust with powdered sugar. Bake at 392°F, static with the door slightly open. It will take 8-10 minutes depending on the size of the cookies.
Storage
You can store the ladyfingers in a tin box for up to a week.
