- 3/8 cup lemon juice
- 1/2 cup water
- 2.1 tbsp cornstarch
- 3/4 cup sugar
- 1 tsp turmeric powder
- 1 lemon peel

Steps for preparing lemon mousse
Prepare the lemon water cream: in a saucepan, pour the sugar and turmeric. This is only to give a nice yellow color to the cream, it doesn’t change the flavor, and you can skip it. Add the water and the strained lemon juice. Mix everything with a hand whisk. Add the cornstarch and grated lemon zest. Place over the heat and, while stirring, cook over low heat until the cream thickens.
Pour the cream into a bowl, cover, and let it cool. I prepared it the day before and left it in the fridge overnight. The important thing is that it is very cold. Whip the cream. I don’t add sugar, but if you like, you can add a couple of teaspoons.
Stir the lemon water cream again; if a bit of liquid has separated, don’t worry, working with the hand whisk will make it perfect again. Incorporate 3/4 of the whipped cream, setting some aside. Mix until you have a homogeneous mousse.
Finally, pour the lemon mousse into cups or glasses. Decorate with the reserved whipped cream and fresh fruit. You can serve immediately or store in the fridge.
Storage
You can store the mousse in the fridge for a day, without cream on the surface as it tends to deflate.
