  • 4 egg yolks
  • 120 g sugar
  • 50 g cornstarch
  • 2 1/8 cups milk

Steps for preparing mascarpone custard cream

  • In a saucepan, mix the egg yolks with sugar. Add the cornstarch and continue mixing with a hand whisk until you obtain a cream. Add the milk while continuously mixing with the whisk.

  • Flavor with grated lemon or orange peel or some vanilla extract. Put on the stove and, while continuously stirring, cook until the cream thickens. Pour the cream into a bowl and cover with cling film directly on the surface. Let it cool and place in the fridge for at least two or three hours.

  • When the cream is well chilled, add the mascarpone and work with the electric beaters until you have a thick and homogeneous cream. The mascarpone cream is ready to be used.
