Steps for the preparation of the Mediterranean omelette
First, remove olives and sun-dried tomatoes from the oil and chop them coarsely. Set aside.
Crack the eggs into a bowl. Add salt, lemon zest (only if you like it), and grated cheese. Mix quickly. Pour some oil into a pan, add the eggs, cover with a lid, and cook on low heat for a few minutes.
Remove the lid and on one half add the tomatoes with olives, mozzarella pieces, and torn basil leaves. Fold the omelette and close with the lid. Cook on low heat for a few more minutes with the lid on.
Storage
You can store the frittata in the refrigerator for two or three days.
