The mozzarella in carriage is one of the most indulgent, savory dishes I know. I cooked it in an air fryer, but you can obviously fry it. Very easy to prepare, contrary to what you might think, quick, but delicious. Perfect to serve as an appetizer or snack, it is a simple but truly tasty dish that always wins with its stringy core and enveloping flavor. The recipe has Lazio and Campania origins, but it is now easy to find throughout Italy. The recommendation I can give you is to use good fresh mozzarella and serve it very hot, with the hot cheese stringing. If you like tasty dishes try the zucchini-filled flatbread bundles, the crusted scamorza, the pizzaiola bundles or the veg flatbreads.

RECIPES WITH MOZZARELLA

Ingredients
- 10 slices sandwich bread
- 2 mozzarellas
- 1 glass Milk
- 3 Eggs
- 3.5 oz Breadcrumbs
- 3.5 oz flour
- to taste salt
- Half lemon peel (grated)
- to taste oil spray

Preparation
Cut the mozzarella into thick slices and let it drain for about half an hour between two sheets of absorbent paper. Break the eggs and quickly work them with a pinch of salt and grated lemon zest.
On half of the bread slices place the mozzarella slices. Cover with the remaining bread slices. Remove the crust from the bread. Press the edges well. Quickly work the eggs with a pinch of salt and grated lemon zest.
Dip the mozzarella in carriage first in the flour, then in the eggs, and finish with the breadcrumbs. Remember to press the edges well and coat them with breadcrumbs.
You can fry in plenty of hot oil or cook in an air fryer for 7-8 minutes at 375°F after spraying with oil and turning halfway through cooking.
Storage
You can store the mozzarellas in the fridge for a couple of days and then heat them up in the oven.
