- 30 Pavesini
- 7 oz White chocolate
- 7 oz Philadelphia
- 1 cup Fresh liquid cream
- 7 oz Dark chocolate
- 3 tbsp Coffee

Preparation of the no-bake Pavesini log
Let’s start by melting the dark chocolate in a bain-marie. With a spatula, spread it as thin as possible on a sheet of parchment paper, place the sheet on a baking tray, and put it in the fridge for at least 30 minutes. Also, melt the white chocolate in a bain-marie and mix it with the Philadelphia, then with the whipped cream. Lay out a sheet of plastic wrap and place the Pavesini soaked in coffee on top. Cover with the cream spread over the entire surface.
Using the plastic wrap, roll up the Pavesini, forming a “salami” that we put in the fridge for at least a couple of hours. Remove the plastic wrap from the roll. Take the chocolate sheet off the parchment paper and break it into pieces. Attach the fake pieces of bark with dark chocolate to the log and place in the fridge until ready to serve.
Storage
You can store the log in the fridge for two or three days.
