Ingredients for preparing pasta and potatoes
- 4 potatoes
- 1 1/4 cups small pasta
- 1 onion
- 4 1/4 cups vegetable broth
- 1 carrot
- 4 tablespoons extra virgin olive oil
- 2 tablespoons double concentrated tomato paste
- to taste salt
- 1 tablespoon chopped parsley
- 3 tablespoons grated Parmesan cheese

Steps for preparing pasta and potatoes
First, peel and wash the potatoes. Cut them into small pieces. Chop the onion and carrot and sauté the mixture in the saucepan with a drizzle of oil. When it sizzles, add the potatoes.
After letting them flavor for a couple of minutes, add some hot vegetable broth. If the broth is unsalted, remember to add salt. Cook for about 5 minutes.
Add the double concentrated tomato paste, the small pasta, and cook, adding hot vegetable broth as needed and stirring often.
When the pasta and potatoes are cooked, remove from heat. Enrich with parsley and Parmesan cheese and mix well. Serve with a drizzle of raw olive oil.
Storage
Store in the refrigerator for one day.
