Steps for preparing pasta with chickpea cream
If you don’t want to use pre-cooked chickpeas, soak the dried chickpeas in cold water the night before. The next morning, rinse them and boil them in plenty of unsalted water. In a pressure cooker, it will take 45 minutes, twice that in a regular pot. Drain them and let them cool.
Wash and cut the tomato into wedges. Cut the onions into large pieces (if they are large, one is enough). Add the garlic, salt, pepper, and a splash of oil. Bake in a static oven at 356°F for about 30 minutes.
Pour the tomatoes with the onions and all the seasoning into a tall container. Add the chickpeas, basil, and blend everything with an immersion blender. Adjust the salt.
Boil the pasta and drain it al dente. Dress it with chickpea pesto, making it a bit creamier with the pasta cooking water. Scent with some torn basil leaves and enrich with a splash of raw oil before serving.
Storage
You can also prepare the chickpea pesto a couple of days in advance and store it in the fridge.
