In a bowl, place the egg yolks. I used bottled yolks that are already pasteurized. Add the sugar and work them with the electric beaters until they are light and fluffy. It will take a few minutes..
Whip the cream. To whip it well, it must be very cold. Add the mascarpone and continue working with the electric beaters until you get a dense foam. Then incorporate the yolks, mixing with a hand whisk.
Spread the cling film on a work surface. Sprinkle with unsweetened cocoa powder. Arrange the Pavesini to form a rectangle. Lightly soak them with coffee. Spread the cream over the Pavesini. Sprinkle with cocoa powder.
Using the cling film, roll up to form the roll. Close the ends well and refrigerate for 4 hours; I usually prepare it the day before. Just before serving, unroll onto a plate and add a final dusting of cocoa.
Storage of the Pavesini Tiramisu Roll
The roll can be stored in the fridge for a couple of days.
