- 10.6 oz potatoes
- 3 peppers
- 1 onion
- to taste salt and pepper
- 3 tbsps extra virgin olive oil
- 1 tbsp chopped parsley

Steps for preparing peppers with potatoes
Peel the potatoes and, after washing them, cut them into chunks. Roughly chop an onion. Sauté it in a pan with a drizzle of oil. Add the potatoes, salt, and pepper and cook with a lid for 10-15 minutes, stirring to prevent sticking.
While the potatoes cook, wash the peppers, cut them in half, and remove the seeds and white part. Then cut them into pieces. When the potatoes are almost cooked, add the peppers, adjust the salt and pepper, and cook a few more minutes, not too long; the peppers should remain a bit crunchy.
During cooking, gently stir to avoid breaking the potatoes. Once cooked, remove the pan from the heat and enrich with chopped parsley. Serve.
Storage
You can store it for a couple of days in the fridge, although the potatoes are not very good reheated.
