Steps for preparing the pistachio roll

  • In one bowl, place 4 egg whites. In another, place the 4 yolks and 1 whole egg. Beat the egg whites, gradually adding half of the sugar. They must be beaten until stiff peaks form.

  • Beat the yolks with the remaining sugar. Once fluffy, slowly add the oil and then the milk. Add the sifted flour with the baking powder, salt, and vanilla. Combine everything. Fold in the beaten egg whites. Pour into a baking pan lined with parchment paper, level it, and bake at 350°F for 20-25 minutes.

  • Once baked, turn the dough onto a clean cloth, roll it up, and let it cool. Once cooled, unroll the dough, spread with the pistachio spread, and let it rest for about 30 minutes. The roll is ready to be sliced.

Storage

You can store the roll under a glass dome for 3-4 days.
