Delicious crispy pizza strips are easy to make and very tasty. Instead of bringing the usual pizza tray to the table, we can prepare these delicious crispy and cheesy slices. I made them with just tomato or mozzarella and tomato, Margherita style, but of course, we can enrich them with all the pizza ingredients you like, such as mushrooms, artichokes, or rich cheeses. Ingredients for preparing pizza strips
- 8 g fresh brewer's yeast
- 600 g all-purpose flour
- 1.5 cups water
- 8 g salt
- 1 tbsp extra virgin olive oil
- 400 g tomato sauce
- 2 tbsps chopped celery, carrot and onion
- 200 g mozzarella
- 4 tbsps extra virgin olive oil
- as needed dried oregano

Steps for preparing pizza strips
Prepare the dough by kneading the flour, crumbled yeast, and water. Add the salt and oil later and knead until you have a smooth and elastic dough. Place in a bowl and let rise, covering with a cloth or plastic wrap, until well risen.
Prepare a mix of chopped celery, carrot, and onion and sauté in a pan with a drizzle of oil. Add the sauce, salt, and, if you like, chili pepper, and let it reduce over low heat.
When the dough has at least doubled in volume, place it on a work surface and make a couple of folds. Divide it into dough balls, you can make them as big as you like. Then roll the dough balls into strips as thin as possible, using a rolling pin and your hands. Place them side by side on a baking sheet lined with parchment paper. Top them with plenty of tomato sauce, oregano, and a drizzle of oil.
Bake in a preheated oven at 482°F, static, for 10 minutes on the lowest rack. Remove from the oven, cover with chopped mozzarella if you like, and place back in the oven for another 10 minutes on the middle rack.
Storage
The pizza strips can be stored in the fridge, well covered, for a couple of days. You can then reheat them in the oven for a few minutes to enjoy them again!
