Potato Focaccia with Radicchio

I really wanted to make a savory pie with radicchio, but, as it happens, I forgot the puff pastry. Taking inspiration from the potato roll, I decided to make the potato focaccia with radicchio, a flavorful and comforting main dish thanks to creamy stracchino. An easy-to-make dish, almost a complete meal, tantalizing, and fragrant that will be greatly appreciated.

Ingredients for preparing the potato focaccia with radicchio

  • 4 large potatoes
  • 1 head long radicchio
  • Half onion
  • 3 as needed extra virgin olive oil
  • as needed salt and pepper
  • 5.3 oz stracchino cheese
  • 4 tablespoons breadcrumbs

Steps for preparing the focaccia with radicchio

  • Chop the onion coarsely. Slice the radicchio into strips and soak in very cold water after removing the base and the outer leaves, especially if they are damaged. Drain and dry. In a pan, sauté the onion with a splash of oil. Add the radicchio, salt, and let it wilt, making sure to dry the water from the vegetables.

  • Peel the potatoes, wash them, and slice them with the mandoline. Line a baking tray with parchment paper. Brush with oil and sprinkle with breadcrumbs. Line the tray with potato slices. They should slightly overlap so there are no gaps between slices. Season with oil, salt, and pepper and bake at 392°F for about 20 minutes.

  • Remove from the oven and cover half of the focaccia with radicchio and dollops of stracchino. Cover by flipping the other half of the focaccia over it. Place back in the oven for a few more minutes, just enough to melt the cheese. Cut into 4 parts and serve.

Storage

You can store the focaccia in the fridge until the next day. Then reheat it in the oven.
