  • 1 small wheel of brie
  • 3.5 oz tomato paste
  • 1 teaspoon dried oregano
  • 1 egg yolk
  • 2 tablespoons milk

Steps for the preparation of the puff pastry crown with brie

  • Brie has that white rind covering it. Remove only the surface part leaving it on the base and edges.

  • Unroll a round puff pastry and place the cheese in the center. Spread the puff pastry, in the part not covered by the cheese, with the tomato paste. Season with oregano. Cover with the second roll making sure to seal well around the cheese.

  • Cut rays into the pastry and roll them on themselves forming breadsticks. Mix the yolk with the milk and brush the crown. Sprinkle with poppy seeds and bake at 356°F for about 25-30 minutes.

  • Remove the puff pastry from above the cheese and bring to the table while hot.

Storage

I do not recommend storing the crown once cooked to avoid continuous temperature changes to the cheese.
