  • 4 Zucchini

Preparation of Quick Gratinated Zucchini

  • Wash the zucchini and trim the ends. At this point, slice them lengthwise. It’s not necessary to use a mandoline as they are gratinated with a flavorful topping, and it’s good to have some thickness to add softness and sweetness to our dish. A well-sharpened knife, used carefully, will be sufficient.

  • In a separate bowl, mix the breadcrumbs, salt, grated cheese, lemon zest, and a chopped mixture of basil, parsley, garlic, and chili pepper. You can omit the parmesan if you don’t like it or want to prepare a vegan recipe. Put some on a baking tray covered with parchment paper. Arrange the zucchini slices without overlapping them.

  • Sprinkle the mixture over the zucchini and drizzle with a little extra virgin olive oil. Preheat the convection oven to 356°F (180°C) for about 25 minutes or until they are golden brown. They are delicious served hot or cold.
