Ingredients for the Preparation of the Raspberry Cup
- 10.5 oz raspberries
- 3 tablespoons sugar
- 1 lemon (juice)
- 7 oz fresh whipping cream
- 18 oz raspberry Greek yogurt
- 2 tablespoons sugar
- 3.5 oz cookies
- 1/4 cup milk

Steps for Preparing the Raspberry Cup
First, use the coulis: in a pan, put the raspberries (I used frozen ones) with sugar and strained lemon juice. Cook for about ten minutes or until the raspberries break apart. At this point, pass the mixture through a fine mesh strainer to remove the seeds. Let cool completely. You can also prepare it the day before and store it in the fridge.
Whip the cream, which should be very cold, with the sugar. Fold in the Greek yogurt and mix from the bottom upwards to prevent the cream from deflating. Add a couple of tablespoons of coulis, mixing slightly to obtain a marbled cream.
In cups, glasses, or small bowls, alternate the cookies (I used cereal ones, but any type of cookie works), soaked with milk, the marbled cream, and the coulis. Make several layers until the chosen container is filled. Place in the fridge a couple of hours before serving, garnishing with more cookies or nut crumbles.
Storage
You can store the cups in the fridge for a couple of days.
