The rice pie with pizza-style sauce is a savory dish, and I can’t even say if it is a main dish or a second course, it is easy and delicious with lots of melting cheese. Just a few ingredients are needed to create a finger-licking dish. Inside my rice pie, I put some Montasio, but we can easily use the preferred melting cheese or, even better, the one we have at home. Even mozzarella will be great. We can also enrich it with cured meats, grilled vegetables, mushrooms, basically whatever your imagination suggests. The beauty of this recipe is that I can prepare it the day before and then bake it at the last moment. The keyword is: go heavy on the cheese. If you want a super delicious dish, the cheese has to ooze with every cut, so don’t skimp. Better a smaller slice of a delicious dish than a generous one of a somewhat dry rice pie with pizza-style sauce.

Ingredients for making the cheesy rice pie
- Half Onion
- 1 carrot
- Half celery stalk
- 11.3 oz Carnaroli rice
- Half cup dry white wine
- 20 oz tomato sauce
- 1 cup Water
- 2 tbsps extra virgin olive oil
- to taste Salt
- 1 oz Butter
- 14.1 oz Montasio cheese
- 1.8 oz grated Parmesan cheese

Preparation of the rice pie
Let’s start by preparing a tomato risotto. In a pot, put finely chopped onion, celery, and carrot with a drizzle of oil and let it simmer for a minute. Add the rice and let it toast. Deglaze with white wine. At this point, we can add the tomato sauce, stir, salt, and cook. If necessary, add water.
When the rice is almost cooked, add the butter and Parmesan and mix well. Line a springform mold with parchment paper with a diameter of 9.5-10.2 inches and pour half of the rice. Press well forming the base.
Cover the surface with cubed cheese and add the remaining rice. Top with Parmesan and some butter flakes. Preheat the static oven to 392°F, bake, and cook for about 15-20 minutes. Serve either hot or cold.
