Steps for preparing ricotta chocolate salami
Break the chocolate into pieces and place it in a bowl. Melt it in a double boiler or microwave. I used dark chocolate, but you can use milk chocolate if you prefer it. Let it cool slightly.
Coarsely chop the shortbread cookies. I crushed them with a pestle, but you can also place them in a freezer bag and crush them with a rolling pin.
Mix the chocolate with fresh cow’s milk ricotta. Combine the cookies and mix well. Pour the mixture onto a sheet of plastic wrap. Shape it into a salami and roll it up. Place in the fridge for two or three hours, and if you like, dust with unsweetened cocoa before serving.
Storage
You can store the salami in the fridge for a couple of days.
