- 3 zucchini
- Half onion
- 3 tbsps extra virgin olive oil
- 1.75 oz stracchino

Steps for Preparing Risotto-Style Orzo with Zucchini
Coarsely chop half an onion. Sauté it in a saucepan with a drizzle of extra virgin olive oil. Meanwhile, grate the zucchini with a large-hole grater.
Add the zucchini and orzo to the onion. Let it absorb the flavors for a couple of minutes. Splash with hot vegetable broth. If you haven’t salted the broth, add salt now. Bring almost to cooking by gradually adding hot vegetable broth. Stir often.
Remove from heat, enrich with stracchino and parsley. Stir and let rest for a couple of minutes. Give it another good stir and serve after adjusting salt and pepper.
Storage
You can store it in the fridge for one day. Add broth to regain creaminess.
