Savory Piadina Cake

This idea came about because there were many of us at dinner and I didn’t feel like making piadina one by one nor preparing pizza. Hence, the Savory Piadina Cake was born, easy and quick to prepare, cheesy and tasty, to be filled with whatever we prefer. I used a good tomato sauce, sautéed mushrooms, which you can prepare at home when in season, and mozzarella. Let’s get to work and prepare the savory piadina cake together.

Ingredients for preparing the savory piadina cake

  • 5 piadine
  • 2 tablespoons minced celery, carrot, and onion
  • 200 ml tomato sauce
  • to taste salt and pepper
  • A few leaves basil
  • 3 tablespoons extra virgin olive oil
  • 10.5 oz mozzarella
  • 6.3 oz sautéed mushrooms
  • 1 oz grated Parmesan cheese

Steps for preparing the savory piadina cake

  • Prepare a good tomato sauce starting with minced celery, carrot, and onion. Let it brown with a bit of oil. Add the tomato sauce, salt, and cook for 10-15 minutes after flavoring with basil or oregano. Let it cool.

  • In a baking tray, place a sheet of parchment paper. Lay down the first piadina. Cover with tomato sauce, finely sliced mozzarella, and sautéed mushrooms. Cover with the second piadina and continue layering until you finish the ingredients.

  • On the last piadina, place the tomato sauce, a good grate of Parmesan, and a drizzle of oil. Bake in a static oven at 356°F (180°C) for about 30 minutes. Serve the savory piadina cake hot and cheesy.

Storage

You can store the piadina cake in the fridge for a couple of days and maybe broil it at the last moment.
