Sweet and creamy thanks to the pumpkin, gooey and flavorful thanks to the cheese, and crispy and light thanks to the puff pastry, the savory pie is loved by everyone. We can easily make variations: use our favorite cheese, perhaps maintaining the stringy texture, but even gorgonzola works divinely, and we can even replace puff pastry with shortcrust pastry. - Half delica pumpkin

Preparation
Wash the pumpkin. I used half of a medium-sized one. Cut it in half. Remove seeds, strings, and skin. Cut it into cubes and set aside. Chop an onion and sauté it for a few minutes in a pan with extra virgin olive oil. Add salt, pepper, aromatic herbs, and cook, adding water gradually if necessary. Let cool.
Roll out the puff pastry sheet, which I used rectangular, but you can also use round. Place it in a baking dish, making sure it has raised edges to contain the filling. Prick the bottom.
After creating a nice layer of pumpkin, make a layer of Asiago cheese cubes. Roughly mix pumpkin and Asiago inside the savory pie. Preheat the static oven to 356°F, bake the savory pie and cook on the lower middle rack for about 30 minutes.
Storage
You can store the savory pie in the refrigerator for two or three days, well covered with plastic wrap.
