- 21 oz potatoes
- 1 egg
- q.s. salt and pepper
- 1 tsp rosemary
- 3.5 tbsp butter
- 1.4 oz parmesan
- 1 tbsp breadcrumbs
How to Make Homemade Savory Pumpkin Pie
Wash the pumpkin, cut it into quarters, and remove seeds and strings. Steam it. In a pressure cooker, it will only take 20 minutes! Peel the potatoes, wash them, and cut them into chunks. Boil the potatoes in a pressure cooker as well.
In a bowl, gather the pumpkin pulp, removing the skin. Add the boiled potatoes, salt, and mash with a fork or potato masher. Let cool slightly. Add egg, rosemary, pepper, and rosemary. Enrich with grated parmesan.
Pour a little oil in a lasagna pan and sprinkle with breadcrumbs. Make a first layer of potato and pumpkin mixture. Add cubed cheese and cover with the remaining mixture.
