Ingredients for preparing simple yeast pizza dough

  • 4 cups All-purpose flour
  • 1 1/4 cups Water
  • 1 tsp Fresh yeast
  • 2 tbsps Extra virgin olive oil
  • 1 tsp Sugar
  • 1 tbsp Salt
  • 7 oz Tomato purée
  • 12 oz Mozzarella
  • to taste Oregano

Preparation

  • Use a mixer or your hands to mix yeast, water, flour, and sugar. Add salt and oil later and work until you have a smooth, elastic dough. By hand, it will take about ten minutes of energetic kneading.

  • If the dough is too dry, add a little water; if it’s too sticky, add a few spoonfuls of flour. At this point, place the dough in a greased bowl and cover with a towel or plastic wrap.

  • Place in a slightly warmed, turned-off oven to rise until doubled in volume (about 2 hours). You can also do this the night before and let it rise in the fridge, which slows down the rising. Once it has risen well, deflate it and place it on a baking sheet with extra virgin olive oil.

  • Spread it out with your fingertips and let it rest for about thirty minutes. Spread the tomato purée and place in the oven at 482°F, at the lowest rack, for 15-20 minutes. Remove from the oven, top with diced mozzarella and place back in the oven, moving the pan higher, for another 10 minutes. Scent with fresh or dried oregano.

Storage

You can store the pizza in the fridge, well-covered, for a couple of days. It can also be frozen.
