At home, they love tarts, actually, all kinds of tarts, with cream, and among those with cream, the one with lemon cream is the favorite, with jam or the tart with Nutella! Sometimes, though, I don’t have much time, so I make the recipe for these smart and super fast tartlets and they are always very popular. They are not classic tartlets, round and with pastry strips, but they are delicious and one leads to another, to be filled with whatever you like best. Ingredients for Smart and Super Fast Tartlets
- 1 2/3 cups all-purpose flour
- 7/16 cup sugar
- 6 1/2 tbsp butter
- 1 egg
- 1 pinch salt
- 1/2 tsp baking powder
- 1 pinch salt
- 1 tsp vanilla extract

Steps for Preparing Smart and Super Fast Tartlets
First, cut the cold butter into small pieces and place it in a bowl. Add the sugar and start working it with the butter. Then add the egg and work with a fork.
Add the sifted flour, baking powder, salt, and vanilla (or grated citrus zest if you prefer). Mix with a fork and then with your hands until you have a smooth and homogeneous mixture.
This dough does not need to rest, so roll it out with a rolling pin. Use the bottom of a wet small glass to create indentations in the pastry, trying not to puncture it. Bake at 356°F for 10 minutes.
Remove the pastry from the oven while not fully cooked, and using the previously used small glass, reshape the indentations that have shrunk a bit. Finish baking for another 10 minutes. Remove from the oven, let it cool, and fill the indentations with jam or spread. Cut with a knife to form our tartlets.
Storage
You can store them for 2-3 days under a glass dome.
