Ingredients for Soft Almond Cookies with 3 Ingredients

  • 2 medium egg whites
  • 3/4 cup granulated or powdered sugar
  • 2 cups almond flour
  • 2 tbsp limoncello
  • 1 cup powdered sugar

Preparation of Soft Almond Cookies with 3 Ingredients

  • Separate the eggs and divide the yolks from the whites. With the yolks, you can make great custard. For our cookies, you only need the whites. I prefer to whip them at room temperature.

  • Work with the electric mixer, gradually adding the sugar until they are whipped to stiff peaks and shiny. Add the almond flour in several batches, mixing with a spoon or fork. Finish by incorporating the limoncello (optional or replaceable with grated lemon zest). Not all egg whites have the same weight so keep some flour aside to add in case the obtained mixture is too runny.

  • Place some powdered sugar in a plate. Roll dough balls (it’s quite soft) in the powdered sugar and place the obtained cookies on a baking sheet. Bake in a preheated, static oven at 350°F, for about 12 minutes. Allow to cool for at least 30 minutes before serving.

Storage

These cookies keep well in a tin for 4-5 days.
