Ingredients for the Preparation of the Soft and Fat-Free Peach Cake
- 4 nectarines (nectarines)
- 2 1/2 cups All-purpose flour
- 1 1/4 cups Yogurt
- 2 Eggs
- 3/4 cup Sugar
- 1 pinch Salt
- 1 packet Baking powder
- to taste grated lemon peel

Preparation
Wash the nectarines and cut them into not too large pieces. In a large bowl, sift the flour and baking powder. Add the salt, sugar, and mix the dry ingredients.
Add the yogurt (you can use natural, lemon, peach, or vanilla), the eggs slightly beaten separately, and mix well with a hand whisk. Finish with salt and grated organic lemon zest.
Butter a cake pan, pour half of the batter, cover with 3/4 of the peach pieces. Pour the second half of the batter and finish with the remaining peaches. Preheat the static oven to 356°F, bake, and cook for about 50 minutes to an hour. Let cool, remove from the mold, and serve with powdered sugar.
Storage
You can store it for 2 days under a glass dome.
