soft cinnamon cinnamoroll

I’ve made a lot of leavened doughs, you who know me know that you can find everything on this blog. I was there researching what I could possibly prepare and a question came to mind: how could I not prepare the soft cinnamon cinnamoroll? A classic with a spice that I love is still missing! Et voilà, soft, super fragrant, buttery with a cream cheese glaze that is to die for. I prepared them with yeast, but we can easily prepare them with sourdough using 100 grams, refreshed, and removing 60 grams of flour from the dough and 30 ml of milk. Let’s roll up our sleeves and prepare the soft cinnamon cinnamoroll together.

Ingredients for the cinnamoroll

  • 0.35 oz fresh yeast
  • 4 cups all-purpose flour
  • 3/4 cup milk
  • 1/3 cup sugar
  • 1/4 cup butter
  • 2 eggs
  • 1 pinch salt
  • 1/3 cup dark brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup butter
  • 4 oz cream cheese
  • 3 tablespoons butter
  • 2/3 cup powdered sugar with vanilla
  • 1 teaspoon vanilla extract

Preparation

  • Let’s start preparing our cinnamoroll by placing the flour with the yeast and warm milk in the stand mixer. Add one egg at a time and, when absorbed, the sugar and finally the butter in pieces and the salt. Mix until you have a smooth and elastic dough that we let rise in a bowl covered with a cloth until doubled in volume.

  • Prepare the filling by creaming the butter. Mix the dark sugar with the cinnamon. When the dough has risen well, roll out the dough forming a rectangle. Spread with butter and sprinkle with cinnamon sugar. Roll the dough forming a long log and cut into 12 slices. Place the rolls obtained to rise in a baking tray covered with parchment paper.

  • Once well risen, bake them in a static oven at 350°F for about 25 minutes. In the meantime, prepare the cream cheese glaze: work the softened butter. Add the cream cheese, powdered sugar, and vanilla and mix to obtain a cream that we put in a piping bag.

  • Remove our cinnamoroll from the oven and decorate with the cream cheese glaze using the piping bag.
