Sponge Roll Pastry

Ingredients for preparing the sponge roll pastry

  • 4 eggs
  • 2/3 cup all-purpose flour
  • 2/3 cup sugar
  • 1 pinch salt

Steps

  • Break the eggs and separate the whites from the yolks. Whip the egg whites until they form stiff peaks, gradually adding 1/3 cup of sugar slowly. They will be perfectly whipped when a tuft of white foam forms upon raising the whisks.

  • Beat the yolks with the remaining sugar. Gently fold them into the egg whites and mix gently. Sift in the flour and a pinch of salt. Mix again until you have a homogeneous foam. Pour into the baking tray lined with parchment paper and level the surface. Bake at 356°F, static, for 12-15 minutes.

  • Once out of the oven, flip the sponge roll pastry onto a clean cloth, remove the parchment paper, and roll the pastry using the cloth. Let it cool completely, unroll, and spread the entire surface with cream, pistachio spread, jam, hazelnut spread, or whipped cream.

Storage and Variations

You can store the sponge roll pastry wrapped in plastic wrap for a day.
