The strawberry jelly recipe is incredibly simple and quick. Just a few ingredients are needed to make a gluten-free, easy, and delicious dessert. I made the strawberry jelly with cream; I used plant-based cream for a vegan dessert, even richer and more irresistible, which you can enhance with crushed pistachios if you like. It’s a perfect dessert to end a meal on a sweet note without feeling heavy, or a perfect fresh and creamy snack.

If you like strawberry desserts, try the strawberry topping, perfect for garnishing ice creams, creams, and desserts, the easy strawberry tart, or the easy strawberry meringue. To fully enjoy this wonderful fruit, try the easy strawberry millefeuille or the creamy dessert with ricotta and strawberries.

Steps to Prepare the Strawberry Jelly

  • To prepare the strawberry jelly, take sweet and flavorful strawberries. Wash and cut them into chunks. Put them in a blender with sugar and the filtered juice of one lemon.

  • After obtaining a strawberry smoothie, pass it through a fine-mesh sieve. In a saucepan, dissolve the cornstarch in water. Add the strawberry smoothie, stir, and place on the stove. Cook, stirring constantly until it thickens.

  • Brush molds with vegetable oil and pour in the mixture. Let it cool and then refrigerate for 3-4 hours. Turn it out onto a plate. Decorate the strawberry jelly with whipped cream, sweetened or not according to taste, and crushed pistachios.

Storage

You can store the strawberry jelly in the fridge for a couple of days.
