Stuffed Eggplant Roll

The stuffed eggplant roll is a very simple dish to prepare, super tasty, perfect for outdoor lunches or dinners because it’s delicious cold, but also great hot, just out of the oven with the cheese melting, it’s amazing. I always use vegan deli meat, and you can have fun with any stretchy cheese you like, sliced or cubed, as long as it melts with every bite!

I recommend not using too watery cheese as it would make everything too soggy. We use round eggplants that are best suited for this type of preparation. Ingredients

  • 2 eggplants
  • 3.5 oz vegan deli slices
  • 5.3 oz sliced scamorza cheese
  • to taste Salt
  • to taste extra virgin olive oil
  • to taste breadcrumbs

Preparation

  • Wash the eggplants and cut them into slices not too thin. Line a baking sheet with parchment paper, sprinkle with breadcrumbs, and arrange the eggplant slices side by side without overlapping. Sprinkle with more breadcrumbs and salt. Drizzle with extra virgin olive oil and bake at 356°F for about 25 minutes.

  • Remove from the oven, let cool slightly, and bring them closer together if they have spread apart during cooking. Cover with vegan deli slices and the sliced cheese.

  • Using the parchment paper, roll everything up into a log, which you place, still wrapped in the paper, in the preheated oven long enough to melt the cheese. Serve the roll hot if you like stretchy cheese, but it’s also delicious cold.

Storage

Store the roll in the fridge for at most two or three days. You can reheat it in the microwave or a hot oven for a few minutes.
