- 3 Large Zucchinis
- 5.3 oz Vegan deli slices
- 5.3 oz Vegan cheese
- to taste Breadcrumbs

Preparation of the zucchini roll with ham and cheese
Wash the zucchinis and thinly slice them lengthwise. You can slice them with a mandolin, but I prefer using a knife because I like them thicker and more substantial. Sprinkle a baking sheet lined with parchment paper with some breadcrumbs. Arrange the zucchini slices side by side, season with salt, sprinkle with a bit of breadcrumbs, and drizzle with some olive oil. If you like, you can add a hint of aromatic herbs. Bake at 356°F for about 20 minutes. They will shrink during cooking, but don’t worry. Alternatively, you can grill them.
Once baked, let them cool a bit and bring them closer together to avoid gaps between slices. Cover them with the deli slices, I used vegan ones, then with the cheese (also vegan in my case) slices and, using the parchment paper, roll them up to form a roll.
Sprinkle with grated Parmesan and place in the oven for about ten minutes if you want to serve a hot roll with melty cheese, but you can also serve it cold.
Storage
You can store the roll in the fridge for a couple of days!
