  • 0.35 oz fresh yeast
  • 4 cups flour (13% protein)
  • 1 cup milk
  • 0.4 cup sugar
  • 5.6 tbsp butter
  • 1 pinch salt
  • 1 grated lemon peel
  • 0.2 cup sugar (for brushing)

Preparation of the super soft brioche croissants

  • Mix the yeast with flour and milk. Continue by adding the sugar. Add the cold butter in small pieces, then the salt with the lemon zest or vanilla extract. Once you have a well-kneaded dough, place it in a bowl covered with a clean cloth to let it rise. When the dough is well puffed up, place it on a floured surface and roll it out gently.

  • Use a wheel cutter or a scraper to cut long triangles to roll into croissants. If you want to fill them, place a teaspoon of spreadable cream, jam, or cream at the base of the triangle and roll it up.

  • Place the croissants on a baking sheet covered with parchment paper to rise. Once well puffed, preheat the oven to 356°F (static) and bake for 20-25 minutes. Dissolve the sugar in 3-4 tablespoons of water and brush the croissants as soon as they come out of the oven.
