Ingredients for preparing the super soft hot milk cake

  • 4 medium eggs
  • 200 g Sugar
  • 2/3 cup Milk
  • 3/4 stick Butter
  • 1 3/4 cup All-purpose flour
  • 1 packet Baking powder
  • 1 pinch Salt
  • Half lemon zest

Preparation

  • Start by heating the milk with the butter and lemon zest over low heat. Alternatively, you can use vanilla extract to add to the milk. Beat the whole eggs with the sugar until they are well frothy.

  • Add the sifted flour with the baking powder to the eggs, mixing with a hand whisk. Strain the hot milk and butter through a sieve and add to the mixture. The milk should be hot, but not boiling.

  • Finish with a pinch of salt and mix until you have a homogeneous mixture. Pour into a cake pan with a diameter of 8.7 inches, covered with parchment paper or greased and floured, and bake at 350°F, static, in the middle-lower part of the oven, for about 40 minutes, still do the toothpick test.

Storage

You can keep the cake for 4-5 days under a glass dome.
