Ingredients for preparing the super soft ring cake with ricotta and chocolate without fats

  • 1 cup cup Ricotta
  • 4 Eggs
  • 1 cup cup Sugar
  • 0.85 cup cup Milk
  • 2 1/2 cups cup All-purpose flour
  • 1 pinch Salt
  • 1 packet Baking powder
  • 4.4 oz oz Dark chocolate chips
  • 1 tsp Vanilla extract

Preparation of the super soft ring cake with ricotta and chocolate

  • Break the eggs and separate the yolks from the whites. Beat the whites with half of the sugar and a pinch of salt until they are frothy and stiff peaks form.

  • Beat the yolks with the remaining sugar. Add the ricotta, then the sifted flour with baking powder, alternating with the addition of milk and vanilla extract. Finish with the beaten egg whites and chocolate chips. 

  • Pour the batter into a greased ring mold and bake in a preheated oven at 356°F for about 45 minutes, checking with a toothpick. Remove from the oven and let cool before taking it out of the mold.

Storage

You can store the soft cake for two or three days under a glass dome.
