- 2 sweet potatoes
- 18 oz spinach
- 2 cloves garlic
- to taste salt and pepper

- 4 tablespoons breadcrumbs

Steps for preparing the sweet potato flatbread with spinach
Peel the sweet potatoes and after rinsing them, cut them very thin. Cover a baking tray with parchment paper. Brush with oil and sprinkle with breadcrumbs. Place the slices overlapping until the entire tray is covered. Season with salt, pepper, oil, and a sprinkle of breadcrumbs. Bake in a fan oven at 375°F until they become soft.
Wash and dry the spinach. Sauté them in a pan with garlic, oil, and salt. At the end of cooking, remove the garlic.
When the potatoes are cooked, take them out and on half of the tray, place the spinach and cheese. Fold the flatbread over itself. Place back in the oven at 390°F for another 10 minutes or so and serve.
