Sweet Rice with Milk and Cinnamon

One of the desserts my mother would make for me when I was feeling unwell was sweet rice with milk and cinnamon. With grated apple with lemon and honey, it remains one of the sweetest and most fragrant childhood memories that comforts me even now when I need solace not just for the body.

Sweet rice is a traditional dessert with a delicate and enveloping taste. Made with a few common ingredients, it combines the creaminess of milk with the soft texture of rice, enriched by the spicy aroma of cinnamon. It’s an easy and versatile recipe, perfect to serve either hot or cold, as a dessert or as a nutritious snack, even great for breakfast. Ingredients for sweet rice with milk and cinnamon

  • 4 1/4 cups whole milk
  • 1 1/4 cups Carnaroli rice
  • 6 tbsp sugar
  • 2 cinnamon sticks
  • Half lemon peel
  • 1 pinch salt
  • to taste ground cinnamon
  • 2 tbsp butter (optional)

Preparation of sweet rice with milk and cinnamon

  • To prepare our sweet rice, heat the milk with the cinnamon and the lemon peel obtained with a peeler. When it reaches the boiling point, lower the heat and let it simmer for 2 minutes. Strain the milk.

  • Put the milk back on the stove, add the sugar, and bring it back to a boil. Add the rice, the salt, and cook until the rice is very soft, stirring very often.

  • Depending on your taste, you can have it softer or denser. If the rice absorbs too much milk, you can add more until you reach the desired consistency. If you want super creamy rice, add a very cold piece of butter. It will thicken a lot as it cools, so keep that in mind when you take it off the heat. Scent it with ground cinnamon and enjoy it hot or let it cool slightly.

Storage

You can store the rice in the fridge for a couple of days.
