Steps for Preparing the Tart with Cream, Jam, and Almonds
Prepare the custard by mixing the egg yolks with the sugar. Add the flour and gradually the milk while whisking by hand to prevent lumps. Flavor with citrus zest and cook, stirring constantly, until the cream thickens.
Prepare the shortcrust pastry by working the cold butter cut into pieces with the flour. Add the eggs, sugar, salt, and lemon zest. Quickly knead to form a dough. Wrap in plastic wrap and refrigerate for 30 minutes.
Divide the pastry in half. Roll out the two pieces and place the rolled pastry in the pans lined with parchment paper. Trim the excess pastry and prick the base. Pour the cream into the 2 pans.
