I love Pavesini cakes, my favorite is the coffee and Nutella Pavesini cake. Being a lover of creamy desserts, I tried making the vanilla and chocolate Pavesini cake.
A dessert that is quickly prepared with a double custard that makes it super delicious. Great to serve on the table to finish a lunch or dinner or ideal for a super yummy snack. I soaked the Pavesini with milk, but if you like, you can soak them with coffee.

Ingredients for preparing vanilla and chocolate Pavesini cake
- 4 1/4 cups milk
- 6 egg yolks
- 3/4 cup sugar
- 3/4 cup cornstarch
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract

- 1 tablespoon unsweetened cocoa powder

Steps for preparing vanilla and chocolate Pavesini cake
Prepare the custard by working the egg yolks with the sugar. Add the cornstarch and continue to whisk by hand, adding a little cold milk. When you achieve a lump-free custard, add the remaining milk, vanilla, and cook, continuously stirring, until the custard thickens.
Divide the custard in half and add unsweetened cocoa powder to one part. Stir until you obtain a homogeneous cream. Cover both custards with cling wrap (without PVC and BPA) in contact with the custard until cold.
Line a baking dish with cling wrap. Use the Pavesini to create the base and edges of the cake. Soak them with milk. Pour the chocolate custard. Cover with a layer of Pavesini and soak them with milk. Pour the remaining custard and close the cake with the final layer of Pavesini, soaking them with milk. Place in the fridge for 2-4 hours.
Invert the cake onto a cutting board or plate. Remove the cling wrap and dust with cocoa before serving.
Storage
The cake keeps in the fridge for two to three days.
