Steps for making vegan burgers

First, peel the potatoes, wash them, and cut them into pieces. Salt them and steam them. In a pressure cooker, it will take 15 minutes. Then season with salt, pepper, and nutmeg.

  • Grate the carrot, after cleaning it, along with the onion and zucchini using a coarse grater. Combine with the potatoes, mince, salt, and parsley, and mix with your hands until you get a homogeneous mixture.

  • Shape the burgers (I made 15) and place them on a baking sheet lined with parchment paper. Top them with some breadcrumbs, a drizzle of oil, and bake in a static oven at 356°F for 20-30 minutes.

Storage

You can keep them for two or three days in the fridge. You can also freeze them raw.
