A pure delight, white rice is one of those dishes that warms the heart. Easy to prepare, but it requires care, needing to be stirred continuously, creamy and stringy. I’ve enriched it with mozzarella, but you can enhance it with the string cheese of your choice, like Asiago, Montasio, smoked Scamorza if you like stronger flavors. Ingredients for the preparation of white rice
- 1 1/2 cups Carnaroli rice
- 6 1/3 cups whole milk
- to taste salt
- 2 mozzarella
- 1 oz pecorino
- to taste pepper

Steps
Put the whole milk on the stove. Keep the heat low and stir often to prevent the milk from sticking with the salt. Just before the milk boils, add the rice. Cook it while continuously stirring.
Always keep the heat low to prevent overflow and ensure it doesn’t stick to the bottom.
At the end of cooking, remove from heat. Cut the mozzarella into chunks. Add it to the rice and enrich with pecorino, or if you prefer, Parmesan. I love adding lots of black pepper. Stir until the cheese melts and serve immediately. I didn’t add butter to keep it lighter, but you can add it if you wish.
