Steps for Preparing Zucchini Puff Pastry Swirls
Wash the zucchinis, clean the carrot and onion. Grate all the vegetables with a coarse grater. Sauté them in a pan with extra virgin olive oil, salt, and pepper. Cook on low heat, drying the vegetables as much as possible. Let them cool.
Remove the puff pastry from the fridge 5 minutes before using it. Unroll and cover with cheese slices. Sprinkle with breadcrumbs to absorb the moisture of the vegetables. Then add the vegetables and, using the parchment paper, form a loaf. Cut into slices about 0.8 inches thick.
Place the pastry swirls in muffin tins with the cut side up. If they are not non-stick, it is advisable to butter them. Bake in the oven at 356°F, static, for 20 minutes. You can then bring the swirls to the table either hot and gooey or cold.
Storage
You can store the swirls in the fridge for two or three days and reheat them in the oven.
