  • 2 oz grated parmesan

Steps for preparing the zucchini roll with stracchino and arugula

  • Grate the cheese using a coarse grater. You can also choose another type of stringy cheese. Then wash the zucchinis and slice them.

  • Line a baking tray with parchment paper. Sprinkle with breadcrumbs. Spread 3/ of the grated cheese. Cover with slightly overlapping zucchini slices. Season with salt and pepper.

  • Cover with the remaining cheese, parmesan, and a drizzle of oil. Bake in a fan oven at 356°F for about 20-25 minutes. Let cool.

  • On the zucchini rectangle, place stracchino flakes, arugula, and vegan cold cuts. Use the parchment paper to roll it up into a roll. Let it rest for about ten minutes and serve.
